hamburg steak set

ingredients

✦ hamburg steak & soy egg sauce

  • 1/2 wagyu ground beef

  • 1/2 ground pork

  • cabbage, onion

  • panko

  • mayonnaise

  • cinnamon

  • sesame oil

  • milk

  • japanese salt

  • japanese egg

  • light soy sauce

✦ simple miso soup

  • dashi powder

  • miso

  • tofu skin

  • silky tofu

  • green onions

✦ izakaya yamitsuki shio cabbage

  • 1 tbsp sesame oil

  • 1 tbsp toasted sesame seeds

  • 1 tsp chinese-chicken powder

  • japanese salt + black pepper

  • green cabbage

  • chili threads (cut up pepper and soak in water)

cooking steps

  1. Dice your onion finely, and put it in a food processor. You can also use a grater to grate your onion!

  2. Grate cabbage finely, and mix it with the onion. Steam for 5-15 minutes. If you’re lazy, you can skip the steaming step and just saute it for a few minutes in a pan. I did both! I think steaming makes juices come out of the cabbage + onion more, and sauteing it gives it a nice flavor.

  3. Mix your ground pork + ground beef together. Add the mixed cabbage + onion, panko, mayonnaise, milk, a little bit of cinnamon, sesame oil, and season with salt. I know it’s scary to eye it, but try to use my video as reference! You can do this 🙂

  4. Divide the mixture into cute little hamburg steaks! If you’re afraid of the meat not cooking through, you can make a small dent in the middle.

  5. Heat up a pan (I like using cast-iron for hamburg steak, but a non-stick pan works fine and is recommended for hamburg steak because it’s so fragile). Heat it up to medium-high heat, add oil, wait a minute or two then add your hamburg steak. Let it sear and cook on one side for 3 minutes. Flip and let it cook on the other side for 2 minutes.

  6. Add two ice cubes and quickly close the pan with a lid. Lower the heat to low-medium and let it steam for 5 minutes.

  7. To make sure they’re done, pierce them with a stick and the juice that comes out should be clear (or very lightly pink, as it will continue cooking once it’s off the pan.)

  8. To make the soy sauce egg mixture, separate your yolk from your egg (this is really yummy with orange yolk eggs, I do not recommend regular yellow eggs) and add some light soy sauce.

  1. Add your sesame oil, toasted sesame seeds, chinese-chicken powder, japanese salt and black pepper in a bowl.

  2. Tear up your washed cabbage into the bowl and mix.

  3. I garnished it with red pepper threads, which are sliced red peppers that were soaked in water, but you can garnish with whatever you’d like.
